Sorrel "Beauty" – a high-yielding and early-ripening variety of a perennial green crop, distinguished by its tender, large leaves with a dark green hue and a wide-angle shape. Bushes grow in a semi-upright form, reaching a height of 28–30 cm and a diameter of 35–42 cm, while the leaf tissue remains juicy and soft. The plant has a mild acidic taste – acidity is about 0.7%, which is almost half that of traditional sorrel varieties, making it more suitable for people with sensitive stomachs.

The yield of the variety reaches up to 4.6 kg/m² during the growing season. The first harvest can be collected as early as 36–42 days after germination, and during the season, 3–4 cuts are usually made due to the rapid regrowth of greens after harvesting. "Beauty" grows well both in open areas and in shaded places, demonstrating resistance to root rot and low temperatures.

For cultivation, seeds germinate at a temperature of +2–3 °C; seedlings appear after the soil warms up to +16–18 °C. The recommended sowing rate is 0.5–1.0 g/m² with a planting depth of 2–3 cm. The crop easily adapts to annual cultivation, during which the product maintains a low content of organic acids and oxalic acid, thereby increasing its dietary value.

"Beauty" is suitable for culinary processing: it can be used in soups, salads, omelets, as well as in canning and freezing. Thanks to its decorative appeal, the plant can serve as an ornament for garden beds or borders, but its main purpose is quality green produce with a mild taste.
